Blackberry Pancakes

These are pretty much just basic oatmeal pancakes with berry sauce. I make oatmeal pancakes whenever I am not in the mood for eating another bowl of oatmeal. Although this is essentially a bowl of oatmeal just in a different package. Well, at least it is for me since I always put egg whites in my oatmeal. Yes, it sounds weird but you can't even taste them in there.


Ingredients:
1/2 cup old fashioned oats
3 egg whites
2 tbsp mashed banana (this is for moisture but you can use canned pumpkin or applesauce instead)
1/4 tsp baking powder
Cinnamon (optional)
Stevia (optional)
1/2 cup blackberries

Directions:
Place all ingredients except berries in a blender and blend. 
Spray a pan set to medium heat. Use a 1/4 cup measure to drop batter onto the pan. Cook like you would a regular pancake (flip when batter starts to make bubbles).
While you are making the pancakes add berries to a small saucepan and add about a 1/4 cup water, cinnamon, and stevia. Cover and bring to a boil then reduce to simmer. Let them cook during the entire time the pancakes are cooking, stirring occasionally. Add water occasionally, if needed. The berries should start to fall apart after awhile but if not you can just mash them up.
When pancakes are done top them with berry sauce.
Eat up!!

You can also use sugar free syrup and different fruits as the topping for these.
